Keto Creamy Chicken Adobo
Creamy Chicken Adobo Recipe for Keto Diet
Chicken Adobo is a traditional Filipino dish made by braising dark meat chicken (drumsticks and thighs) in a delicious sauce. Adobo sauce is made up of vinegar, soy sauce, garlic, and black pepper & spices. It’s tangy, salty, garlicy, slightly sweet, and spicy. The chicken is slowly simmered in the sauce making it incredibly tender & flavorful.
Keto Creamy Chicken Adobo
Chicken Adobo is an effortless recipe that makes an easy and inexpensive weeknight meal. Chicken legs and thighs are incredibly economical and are the perfect canvas for this creamy, tangy, sweet and savory glaze. Our creamy chicken adobo recipe adds coconut cream to the mix, a perfect addition to make this sauce even more special.
Peel and keep your garlic whole for this recipe. This will simply add a subtle and slightly sweet garlic flavor to the dish.
The sauce for this recipe will cover 4-6 chicken leg pieces. If you want to cook a family size batch just double the ingredients.
Getting it done
1) Heat olive oil in a braising pan.
2) Add chicken and sear until brown on both sides. You can use whole chicken legs as I have, or use drumsticks & thighs that are separated.
3) Add the chicken stock, vinegar, soy sauce, bay leaf, garlic, black peppercorns. Leave garlic and peppercorns whole.
4) Simmer for 20-25 minutes. Reduce pan juices and stir in coconut cream.
5) Season as needed with salt.
Creamy Keto Chicken Adobo - Enjoy!
We hope you enjoy this creamy, tangy and delicious sauce as much as we do! Try it with other types of meat such as pork belly or chicken wings as well.
Add boiled eggs for a traditional Filipino flair that is super keto-friendly!

Coconut Cream & Keto
Coconut milk is a great alternative for those who follow a ketogenic & paleo diet and avoid dairy. It’s high in fat, low in carbs and won’t kick you out of ketosis. Also, just like coconut oil, it contains fat-burning MCTs.
Keep it Sweet (and keto!)
My personal favorite keto sweetener is Lakanto Monkfruit Sweetener. It’s what I typically use in my coffee and something I keep in the pantry for when I get a sweet tooth.
